Hyderabad

21 / 23 Oct

Take a stroll through Hyderabad’s chaotic labyrinth of streets, and you’ll be met with futuristic skyscrapers towering over glittering bazaars and the opulent, manicured gardens of grand Mughal palaces.

Once the home of kings and queens, it’s now home to some of the world’s biggest tech giants - a city steeped in history, where cultures come together over a steaming bowl of fragrant rice.

Hyderabadi food is a particularly special mix. Much like the city, it’s built on layers and is a rich, aromatic fusion of Mughlai, Turkish, and Arabic royal court traditions blended with regional Telangana and Andhra influences.

Here, you’ll find creamy sauces made with toasted nuts, properly tangy dals and fresh, dry-spiced vegetables straight from the market. It’s bold and deeply aromatic, with sourness playing just as important a role as heat.

Cabbage Poriyal

Crisp and fresh - shredded carrot, cabbage, and cavelo nero are tempered with mustard seeds and curry leaves, then topped with flaked coconut, lemon and green chilli. It’s light and bright and the perfect palate cleanser between bites.

Hyderabadi Salan

Slow-roasted sweet potato, charred green peppers and onion, simmered in a glossy base of tangy tamarind, coconut and toasted sesame and peanuts. Rich, nutty and unmistakably Hyderabadi.

Khatti Dal

Toor dal cooked with tomato, turmeric and tamarind, then finished with a hot tadka of garlic, cumin, mustard and chilli. Khatti means sour, and that bright, mouthwatering tang is exactly what makes this dal sing.

Lemon Rice

Fresh basmati rice, lit up with lemon and turmeric and dotted with urad lentils. The foundation for any great meal!
