Ludhiana

11 / 13 Nov

If you grew up with Bollywood, you’ll know the image instantly. Shah Rukh Khan, Kajol, endless yellow mustard fields.

The film was Dilwale Dulhania Le Jayenge, or DDLJ, one of the defining Hindi films of the 90s.

For many Indians, those mustard fields became a visual love letter to Punjab.

Around Ludhiana, the city gives way to that same agricultural landscape. Fertile, glowing fields, rice paddies, winter greens.

This is the kind of hearty food this menu draws from. Comforting, seasonal dishes, cooked the old-school Punjabi way, full of tandoor smoke, an earthy richness and warming spices.

Proper Punjabi soul food.

Green Bean & Lobia Subzi
Green beans and black-eyed beans tossed through a bold Punjabi masala of toasted coriander, cumin, ginger and chilli. Brightened with a sour hit of pomegranate at the end, with plenty of texture from the beans.

Tofu or Paneer Saag
A Punjabi classic! Leafy greens cooked down with ginger, garlic, green chilli and warming spices until rich and deeply savoury. Topped with a punchy tadka and chilli-dusted paneer or tofu for extra layers of flavour.

This week we’ve partnered with our friends at All The Aunties Paneer. Select Paneer as an add-on in your confirmation email to switch out your tofu for flavour-packed premium paneer handmade by Riya and the team in the UK using 100% British milk.

Sabut Mung Dal
Whole Mung dal slow-cooked until dark and creamy, then finished with garlic, cumin, and kasuri methi. It’s rich, comforting and nourishing.

Jeera Rice
Fluffy Jeera Rice, speckled and fragrant with cumin seeds - ready and waiting to soak up every last drop!
