Golden Madras Curry

In Tamilian cooking, spice is layered and balanced. Sweet against bitter. Heat against calm. Our Madras curry is the perfect example of this.

Blooming turmeric meets seasonal squash, softened slowly until it turns silky and golden. Next comes Fenugreek, added sparingly for a bittersweet depth that lingers at the back of the palate, with cracked black pepper, curry leaves and a sprinkling of Pul Biber for fragrance and a steady warmth.


Butter Bean Sundal

Tender, melt-in-the-mouth butter beans with silky coconut folded through, and a zing of fresh lemon added just before serving to keep the brightness intact. A comforting and filling dish, high in protein, gently spiced. Light, but sustaining. 


Charred Broccoli Thoran

Broccoli charred until sweet and vibrant green, then tempered with toasted nuts and seeds, crisp onion, and chilli.  


Lemon Brown Rice

Wholesome brown rice, cooked in turmeric, citrus and curry leaf until nutty and distinct.
