The magical island of Sri Lanka has a special place in our hearts, we love rickshaw rides through its tropical forests and swimming in the balmy sea but most of all, we adore the food. Walk through any street and you'll smell the tropical curry leaf infused smells of their salads, sambols, curries and dals. In our love letter to this heavenly country, this weeks Dabba brings you Jackfruit Kottu roti with sweet, peppery tones, cabbage, carrot and curry leaf, followed by a fruity Aubergine curry with tomatoes, coconut and tamarind. Earthy and sweet beetroot mung dal and red rice to finish, will leave you with a golden infused glow, just like a holiday to our favourite Indian Ocean island would :)
